These no-bake chocolate chip cottage cheese cookie dough bites are a healthy and protein-packed snack. With creamy cottage cheese, almond flour, and chocolate chips, they’re perfect for satisfying your sweet tooth guilt-free.

  • 1/2 cup cottage cheese (blended until smooth)
  • 1/2 cup almond flour (or oat flour)
  • 1/4 cup natural peanut butter (or almond butter)
  • 2 tbsp honey or maple syrup (adjust to taste)
  • 1/4 tsp vanilla extract
  • Pinch of salt
  • 1/4 cup mini chocolate chips (dark or semi-sweet)

Instructions

  1. Blend the Cottage Cheese:
    • In a blender or food processor, blend the cottage cheese until smooth and creamy.
  2. Combine Ingredients:
    • In a medium bowl, mix the blended cottage cheese, almond flour, peanut butter, honey, vanilla extract, and a pinch of salt until a dough forms. The texture should be soft but moldable.
  3. Fold in Chocolate Chips:
    • Gently fold in the mini chocolate chips until evenly distributed.
  4. Shape into Bites:
    • Scoop about 1 tablespoon of dough and roll it into a ball. Repeat with the remaining dough. You should get about 12–14 bites.
  5. Chill:
    • Place the bites on a parchment-lined plate or container and refrigerate for at least 30 minutes to firm up.
  6. Serve:
    • Enjoy chilled or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 5 days.


Notes

  • For a nut-free version, use sunflower seed butter instead of peanut butter.
  • Add a sprinkle of cinnamon or a dash of cocoa powder for extra flavor.
  • These bites can be frozen for up to 2 months. Let them thaw for a few minutes before eating.
