1/2 cup almond flour (or oat flour)
1/4 cup natural peanut butter (or almond butter)
2 tbsp honey or maple syrup (adjust to taste)

1/4 cup mini chocolate chips (dark or semi-sweet)
Instructions
Blend the Cottage Cheese:
In a blender or food processor, blend the cottage cheese until smooth and creamy.
Combine Ingredients:
In a medium bowl, mix the blended cottage cheese, almond flour, peanut butter, honey, vanilla extract, and a pinch of salt until a dough forms. The texture should be soft but moldable.
Fold in Chocolate Chips:
Gently fold in the mini chocolate chips until evenly distributed.
Shape into Bites:
Scoop about 1 tablespoon of dough and roll it into a ball. Repeat with the remaining dough. You should get about 12–14 bites.
Chill:
Place the bites on a parchment-lined plate or container and refrigerate for at least 30 minutes to firm up.
Serve:
Enjoy chilled or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 5 days.
Notes
For a nut-free version, use sunflower seed butter instead of peanut butter.
