  • ¼ cup brown sugar, packed
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup milk
  • ½ cup plain yogurt or sour cream
  • 2 large eggs
  • ⅓ cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with liners or grease it.
  2. In a bowl, whisk flour, sugars, baking powder, and salt.
  3. In another bowl, whisk together milk, yogurt, eggs, oil, and vanilla until smooth.
  4. Pour wet ingredients into dry and gently stir until just combined—batter should be slightly lumpy.
  5. Fold in chocolate chips, reserving a few for topping.
  6. Divide batter evenly among muffin cups (about ¾ full) and sprinkle with remaining chips.
  7. Bake 16–18 minutes, or until golden and a toothpick comes out clean or with a few moist crumbs.
  8. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.

  • Do not overmix the batter to keep muffins tender.
  • Yogurt adds moisture—substitute with sour cream or buttermilk if needed.
