Chocolate Chip Peanut Butter Cups are a perfect combination of creamy peanut butter, melty chocolate, and a surprise crunch of mini chocolate chips. These no-bake treats are easy to make and ideal for satisfying your sweet tooth or sharing at parties!

For the peanut butter filling:

  • 1/2 cup (120 g) creamy peanut butter
  • 1/4 cup (60 g) unsalted butter, softened
  • 1/4 cup (30 g) powdered sugar, sifted
  • 1/2 teaspoon vanilla extract
  • 1/4 cup (45 g) mini chocolate chips

For the chocolate shell:

  • 1 1/2 cups (260 g) semi-sweet chocolate chips
  • 1 tablespoon coconut oil or vegetable oil (optional, for a smoother finish)

Instructions

Step 1: Prepare the peanut butter filling

  1. In a medium bowl, mix together the peanut butter, softened butter, powdered sugar, and vanilla extract until smooth and well combined.
  2. Fold in the mini chocolate chips. Refrigerate the mixture for 10-15 minutes to firm up slightly for easier handling.

Step 2: Melt the chocolate

  1. In a microwave-safe bowl, melt the semi-sweet chocolate chips and coconut oil (if using) in 20-second intervals, stirring after each, until smooth.

Step 3: Assemble the cups

  1. Line a mini muffin tin with paper liners.
  2. Spoon about 1 teaspoon of melted chocolate into the bottom of each liner. Use the back of a spoon to spread it slightly up the sides.
  3. Roll the peanut butter filling into small balls (about 1 teaspoon each) and flatten slightly. Place a piece of filling in the center of each chocolate-lined cup.
  4. Cover the peanut butter filling with another teaspoon of melted chocolate, ensuring it’s fully sealed. Gently tap the muffin tin on the counter to smooth the tops.

Step 4: Chill and serve

  1. Refrigerate the peanut butter cups for 20-30 minutes, or until set.
  2. Remove the paper liners and enjoy!

  • Storage: Store the peanut butter cups in an airtight container in the refrigerator for up to 2 weeks.
  • Freezing: Freeze the cups for up to 3 months. Thaw in the refrigerator before serving.
