Chocolate Chunk Oatmeal Cookie Bars are chewy, hearty, and loaded with melty chocolate chunks and wholesome oats. These easy-to-make bars combine the best of cookies and blondies for a satisfying dessert or snack.

  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups old-fashioned rolled oats
  • 1 1/2 cups chocolate chunks (semisweet or dark)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease.
  2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in eggs and vanilla until smooth.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients and mix until just combined.
  5. Stir in oats and chocolate chunks until evenly distributed.
  6. Spread the dough evenly into the prepared baking pan.
  7. Bake for 25–30 minutes, or until golden brown and a toothpick inserted in the center comes out with moist crumbs.
  8. Cool completely in the pan before slicing into bars.
