For the Brownies:

  • 1 box brownie mix (plus eggs, oil, and water as called for on box)
    or use your favorite homemade brownie recipe

For the Strawberry Layer:

  • 1 ½ cups fresh strawberries, finely chopped

  • ¼ cup strawberry jam or preserves

For the Chocolate Topping:

  • 1 cup semi-sweet or dark chocolate chips

  • 1 tablespoon coconut oil

Instructions

  1. Bake the Brownies:
    Preheat oven to 350°F (175°C). Prepare and bake brownies in an 8×8-inch or 9×9-inch pan according to package instructions. Let cool completely.

  2. Add the Strawberry Layer:
    In a bowl, mix the chopped strawberries with the strawberry jam. Spread this mixture evenly over the cooled brownies. Gently press it down to stick.

  3. Make the Chocolate Topping:
    In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring until smooth. Pour over the strawberry layer and spread evenly.

  4. Chill and Set:
    Place the brownies in the fridge for at least 30 minutes to allow the chocolate topping to harden.

  5. Slice and Serve:
    Use a sharp knife to cut into squares. Wipe the blade between cuts for clean edges. Serve chilled or at room temp.
