Chocolate Mayonnaise Cake is a rich, moist, and indulgent cake that uses mayonnaise in place of eggs and oil. It’s a vintage recipe known for its deep chocolate flavor and tender crumb, perfect for celebrations or everyday dessert.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup mayonnaise
  • 1 cup water
  • 1 tsp vanilla extract
  • Optional: powdered sugar or frosting for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or two 8-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  3. Add mayonnaise, water, and vanilla. Mix until smooth and well combined.
  4. Pour batter into the prepared pan(s) and smooth the top.
  5. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Frost or dust with powdered sugar if desired before serving.

Notes

  • Use real mayonnaise (not salad dressing) for best results.
  • Enhance the chocolate flavor with a handful of chocolate chips or a splash of coffee.
  • This cake stays moist for several days—store covered at room temperature or in the fridge.
