1 cup unsalted butter, melted
1 cup packed light brown sugar
1 1/2 cups all-purpose flour
1 1/2 cups old-fashioned rolled oats
1 teaspoon baking soda
1/4 teaspoon salt
1 cup semisweet chocolate chips
1 cup chopped pecans or walnuts (optional)
1 (11-ounce) bag caramel bits or 35 unwrapped caramels
1/2 cup heavy cream
Instructions
Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or lightly grease it.
In a large bowl, combine melted butter and brown sugar until smooth.
Stir in flour, oats, baking soda, and salt until fully combined.
Press half of the oat mixture evenly into the bottom of the prepared pan.
Bake for 10 minutes. Meanwhile, in a small saucepan over low heat, melt caramels with heavy cream, stirring until smooth.
Remove crust from oven and sprinkle with chocolate chips and nuts (if using).
Pour warm caramel sauce evenly over the chocolate chips and nuts.
Crumble the remaining oat mixture over the caramel layer.
Bake for an additional 15–20 minutes, or until the top is lightly golden.
Cool completely before cutting into bars to allow the caramel to set.
Notes
Line the pan with parchment paper for easy removal and cleaner slices.
Use store-bought caramel sauce if you’re short on time.
Store bars in an airtight container at room temperature for up to 4 days.
