1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semi-sweet chocolate chips
1/2 cup creamy peanut butter
1/4 cup unsalted butter, softened (for filling)
1 cup powdered sugar (for filling)
1 teaspoon vanilla extract (for filling)
Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
Add eggs and vanilla extract; mix until combined.
In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
Gradually add dry ingredients to the wet mixture until a dough forms. Stir in chocolate chips.
Drop tablespoon-sized portions of dough onto prepared baking sheets, spacing 2 inches apart.
Bake for 8–10 minutes or until cookies are set. Allow to cool on the pan for 2 minutes before transferring to a wire rack to cool completely.
To make the filling, beat peanut butter and butter together until smooth. Add powdered sugar and vanilla extract; beat until fluffy.
Once cookies are cool, spread or pipe peanut butter filling onto the flat side of half the cookies. Top with remaining cookies to form sandwiches.
Store in an airtight container at room temperature or chilled for firmer texture.
Notes
Use crunchy peanut butter for added texture in the filling.
Chill the dough for 30 minutes for thicker cookies.
Can be frozen with or without filling for up to 2 months.
