These Chocolate Rice Krispie Balls are a fun, no-bake treat that’s crunchy, chocolatey, and perfect for snacking or dessert. Made with marshmallows, chocolate, and crispy rice cereal, they’re easy to whip up and great for parties or holiday treats!

  • 3 cups Rice Krispies cereal
  • 1 ½ cups semi-sweet chocolate chips
  • 1 cup peanut butter (creamy or crunchy)
  • 1 ½ cups mini marshmallows
  • ¼ cup unsalted butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt

Instructions

  1. Melt the chocolate mixture: In a microwave-safe bowl or saucepan over low heat, melt the chocolate chips, peanut butter, and butter, stirring frequently until smooth.
  2. Add vanilla & marshmallows: Remove from heat and stir in vanilla extract and salt. Gently fold in the mini marshmallows.
  3. Mix with cereal: In a large bowl, pour the melted chocolate mixture over the Rice Krispies cereal. Stir well until everything is evenly coated.
  4. Shape the balls: Using a spoon or cookie scoop, scoop out portions and roll them into balls. Place them on a baking sheet lined with parchment paper.
  5. Chill: Refrigerate for about 30 minutes or until firm.
  6. Serve & enjoy! Store in an airtight container at room temperature for up to 5 days or in the fridge for a longer shelf life.

Notes

  • For extra crunch, mix in chopped nuts or crushed pretzels.
  • Drizzle with white chocolate or sprinkle with sea salt for added flavor.
  • If peanut butter isn’t an option, substitute with almond butter or sunflower seed butter.
