  • 2 cups (300 g) pineapple, diced
  • 2 cups (300 g) strawberries, hulled and sliced
  • 1 cup (150 g) pomegranate seeds
  • 2 kiwi fruits, peeled and sliced
  • 1 orange, peeled and segmented
  • 1/2 cup (50 g) shredded coconut (optional, for garnish)
  • Fresh mint leaves, for garnish

For the dressing:

  • 1/4 cup (60 ml) orange juice (freshly squeezed if possible)
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon lemon zest

Instructions

1. Prepare the fruit

  1. Wash, peel, and slice all fruits as needed. Combine the grapes, pineapple, strawberries, pomegranate seeds, kiwi slices, and orange segments in a large mixing bowl.

2. Make the dressing

  1. In a small bowl, whisk together the orange juice, honey, vanilla extract, and lemon zest until smooth.

3. Toss the salad

  1. Pour the dressing over the fruit and gently toss to coat evenly.

4. Garnish and serve

  1. Transfer the fruit salad to a serving dish. Garnish with shredded coconut and fresh mint leaves for a festive touch.
  2. Serve immediately, or refrigerate for up to 2 hours to chill before serving.
