Ingredients

Scale
  • 6 cups mixed salad greens (arugula, spinach, or spring mix)
  • 1/2 cup pomegranate seeds
  • 1/2 cup dried cranberries
  • 1/2 cup candied pecans or walnuts
  • 1/2 cup crumbled feta or goat cheese
  • 1 apple, thinly sliced

  • 3 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • Salt and black pepper to taste

Instructions

  1. In a large salad bowl, combine mixed greens, pomegranate seeds, dried cranberries, nuts, cheese, and sliced apple.
  2. In a small bowl or jar, whisk together olive oil, Dijon mustard, honey, apple cider vinegar, salt, and pepper until emulsified.
  3. Drizzle dressing over the salad just before serving and toss gently to combine.
  4. Serve immediately as a fresh, festive side dish.

Notes

  • Add grilled chicken or roasted turkey for a more filling main dish.
