  • 6 cups (about 200 g) mixed salad greens (spinach, arugula, or romaine)
  • 1 cup (150 g) pomegranate seeds
  • 1 cup (150 g) fresh orange segments (or mandarin slices)
  • 1/2 cup (75 g) dried cranberries
  • 1/2 cup (50 g) candied pecans or walnuts
  • 1/2 cup (50 g) crumbled feta or goat cheese

For the dressing:

  • 1/4 cup (60 ml) olive oil
  • 2 tablespoons fresh orange juice
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. Prepare the dressing:
    • In a small bowl or jar, whisk together the olive oil, orange juice, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined. Taste and adjust the seasoning as needed.
  2. Assemble the salad:
    • In a large serving bowl, layer the mixed greens, pomegranate seeds, orange segments, dried cranberries, candied pecans, and crumbled cheese.
  3. Dress the salad:
    • Drizzle the dressing over the salad just before serving. Toss gently to coat all ingredients evenly.
  4. Serve:
