For the cookie bars:

  • ½ cup (115 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • 1 ½ cups (190 g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

For the frosting:

  • ½ cup (115 g) unsalted butter, softened
  • 2 cups (250 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons milk
  • Food coloring (red, green, or holiday colors)
  • Holiday sprinkles

Instructions

For the cookie bars:

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper or grease it well.
  2. Make the dough:
    • In a large bowl, cream the butter and sugar together until light and fluffy.
    • Beat in the egg, vanilla extract, and almond extract (if using).
    • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  3. Bake:
    • Press the dough evenly into the prepared baking pan. Bake for 18-20 minutes, or until the edges are lightly golden. Do not overbake; the bars should be soft.
    • Let the cookie bars cool completely in the pan before frosting.

For the frosting:

  1. Make the frosting:
    • In a medium bowl, beat the softened butter until creamy. Add the powdered sugar, vanilla extract, and 2 tablespoons of milk. Beat until smooth and fluffy, adding more milk if needed to reach your desired consistency.
    • Mix in food coloring to achieve festive holiday hues.
  2. Frost and decorate:
    • Spread the frosting evenly over the cooled cookie bars. Decorate with holiday sprinkles.
  3. Cut and serve:
    • Lift the bars out of the pan using the parchment paper and cut them into squares or rectangles.
