Churro Bars are a fun and easy twist on traditional churros, featuring layers of cinnamon-sugar goodness baked into soft, chewy bars.

  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/4 cup granulated sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9×13 inch baking dish with parchment paper.
  2. In a large bowl, mix melted butter, 1 cup granulated sugar, and brown sugar until well combined.
  3. Add eggs and vanilla extract, stirring until smooth.
  4. In a separate bowl, whisk together flour, baking powder, salt, and 1 tablespoon cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
  6. Spread the dough evenly into the prepared baking dish.
  7. In a small bowl, combine 1/4 cup granulated sugar and 1 tablespoon cinnamon for the topping.
  8. Sprinkle the cinnamon-sugar mixture evenly over the dough.
  9. Bake for 22-25 minutes or until the edges are golden and a toothpick inserted comes out clean.
  10. Allow to cool completely before slicing into bars and serving.

Notes

  • Do not overbake to keep the bars soft and chewy.
  • For extra richness, drizzle with melted chocolate or caramel after baking.
  • Store in an airtight container at room temperature for up to 4 days.
