These Cilantro Lime Chicken Thighs are juicy, flavorful, and loaded with zesty, herby goodness. Marinated in fresh lime juice, garlic, and cilantro, then pan-seared or grilled to perfection, they’re the perfect main dish for tacos, rice bowls, or a simple side of veggies.
4 boneless, skinless chicken thighs
2 tablespoons olive oil
Juice of 2 limes (about 4 tablespoons)
Zest of 1 lime
3 garlic cloves, minced
1/4 cup fresh cilantro, chopped
1 teaspoon honey or maple syrup
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
Salt and black pepper, to taste
Optional: extra lime wedges and chopped cilantro for serving
In a bowl or zip-top bag, whisk together olive oil, lime juice, lime zest, garlic, cilantro, honey, cumin, chili powder, salt, and pepper.
Add the chicken thighs and toss to coat. Cover and marinate in the fridge for at least 30 minutes, or up to 8 hours.
Heat a skillet or grill pan over medium-high heat.
Remove chicken from marinade and cook for 5–6 minutes per side, or until cooked through and nicely browned (internal temp should reach 165°F).
Let rest for 5 minutes before serving. Garnish with extra lime and cilantro if desired.
Works great with bone-in thighs too—just increase cooking time slightly.
Try serving with rice, cauliflower rice, or in tacos with slaw.
Leftovers are great chopped into salads or wraps.
