Cilantro Lime Chicken is a zesty, flavorful dish made with fresh lime juice, garlic, and cilantro. Perfect for grilling, baking, or stovetop cooking, it pairs well with rice, tacos, or salads.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 teaspoons lime zest
  • 3 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together olive oil, lime juice, lime zest, garlic, cilantro, cumin, chili powder, salt, and pepper.
  2. Place chicken breasts in a resealable bag or shallow dish and pour marinade over them. Marinate in the refrigerator for at least 30 minutes or up to 4 hours.
  3. Preheat grill or skillet over medium-high heat. Remove chicken from marinade and discard the marinade.
  4. Grill or cook chicken for 6–7 minutes per side, or until internal temperature reaches 165°F (74°C).
  5. Let the chicken rest for 5 minutes before slicing. Garnish with extra cilantro and lime wedges if desired.

Notes

  • This chicken is great for meal prep or as a taco or burrito filling.
  • For extra flavor, reserve a small amount of marinade (before adding chicken) to drizzle over the cooked chicken.
  • Can be baked at 400°F (200°C) for 20–25 minutes if preferred.
