Cilantro Lime Confetti Orzo is a bright and zesty side dish that brings color and fresh flavor to any meal. It’s packed with tender orzo pasta, sweet corn, bell peppers, and a punchy cilantro-lime dressing. Perfect for cookouts, weeknight dinners, or as a base for grilled chicken or shrimp.

Ingredients

  • 1 cup dry orzo pasta

  • 1/2 cup red bell pepper, finely diced

  • 1/2 cup yellow bell pepper, finely diced

  • 1/2 cup corn kernels (fresh, frozen, or canned)

  • 1/4 cup red onion, finely chopped

  • 1/3 cup fresh cilantro, chopped

  • Zest of 1 lime

  • Juice of 2 limes

  • 2 tablespoons olive oil

  • Salt and pepper to taste

Instructions

  1. Cook the orzo according to package directions. Drain and rinse under cold water to cool.

  2. In a large mixing bowl, combine the cooked orzo, red and yellow bell peppers, corn, red onion, and cilantro.

  3. In a small bowl, whisk together the lime juice, lime zest, olive oil, salt, and pepper.

  4. Pour the dressing over the orzo mixture and toss well to combine.

  5. Taste and adjust seasoning if needed. Chill in the refrigerator for at least 20 minutes before serving.

Notes

  • Add black beans or avocado for a heartier version.
