This Cilantro Lime Grilled Chicken is juicy, flavorful, and bursting with bright citrus and herb notes. The marinade is quick and easy, making it perfect for meal prep, summer grilling, or a fresh weeknight dinner. Serve it with rice, salad, or in tacos for a delicious twist.
4 boneless, skinless chicken breasts (or thighs)
1/4 cup olive oil
1/4 cup freshly squeezed lime juice (about 2 limes)
2 tbsp lime zest
1/4 cup chopped fresh cilantro
3 cloves garlic, minced
1 tsp honey or maple syrup
1/2 tsp ground cumin
1/2 tsp chili powder (optional, for a kick)
Salt and pepper, to taste
Make the marinade:
In a bowl or large resealable bag, whisk together olive oil, lime juice and zest, cilantro, garlic, honey, cumin, chili powder, salt, and pepper.
Marinate the chicken:
Add chicken to the marinade, coat well, and refrigerate for at least 30 minutes or up to 8 hours for best flavor.
Grill:
Preheat grill to medium-high heat. Remove chicken from marinade and grill for 6–8 minutes per side, or until internal temperature reaches 165°F.
Serve:
Let chicken rest for 5 minutes. Slice and serve with extra lime wedges and chopped cilantro if desired.

You can also bake the marinated chicken at 400°F for 25–30 minutes if preferred.
