Ingredients

1 cup long grain white rice
2 cups water
1 tablespoon olive oil or butter
1/2 teaspoon salt
1 tablespoon fresh lime juice
1 teaspoon lime zest
1/4 cup chopped fresh cilantro
Instructions
In a medium saucepan, combine rice, water, olive oil or butter, and salt. Bring to a boil.
Reduce heat to low, cover, and simmer for 15–18 minutes, or until rice is tender and water is absorbed.
Remove from heat and let sit, covered, for 5 minutes.
Fluff rice with a fork, then stir in lime juice, lime zest, and chopped cilantro.
Serve warm as a side dish or base for burrito bowls.
Notes
Use vegetable broth instead of water for extra flavor.
Can be made with brown rice; just adjust cooking time and liquid as needed.
Best served fresh, but can be stored in the fridge for up to 3 days and reheated.
