Cilantro Lime Rice is a fresh and zesty side dish made with fluffy rice, bright lime juice, and fragrant cilantro. Perfect alongside tacos, burritos, grilled meats, or in burrito bowls.

Ingredients

  • 1 cup long grain white rice
  • 2 cups water
  • 1 tablespoon olive oil or butter
  • 1/2 teaspoon salt
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a medium saucepan, combine rice, water, olive oil or butter, and salt. Bring to a boil.
  2. Reduce heat to low, cover, and simmer for 15–18 minutes, or until rice is tender and water is absorbed.
  3. Remove from heat and let sit, covered, for 5 minutes.
  4. Fluff rice with a fork, then stir in lime juice, lime zest, and chopped cilantro.
  5. Serve warm as a side dish or base for burrito bowls.

Notes

  • Use vegetable broth instead of water for extra flavor.
  • Can be made with brown rice; just adjust cooking time and liquid as needed.
  • Best served fresh, but can be stored in the fridge for up to 3 days and reheated.
