1 lb shrimp, peeled and deveined
2 tbsp olive oil
2 tbsp lime juice (freshly squeezed)
1 tsp lime zest
2 cloves garlic, minced
1/4 cup fresh cilantro, chopped
1/2 tsp ground cumin
1/2 tsp paprika
Salt and pepper to taste
8 small corn tortillas
1 cup shredded cabbage or slaw mix
1/4 cup sour cream
1 tbsp mayonnaise
1 tbsp lime juice (for sauce)
1 tbsp chopped cilantro (for sauce)
Optional toppings: avocado slices, jalapeños, hot sauce
Instructions
In a bowl, combine shrimp, olive oil, lime juice, lime zest, garlic, cilantro, cumin, paprika, salt, and pepper. Marinate for 15-20 minutes.
While shrimp marinates, prepare the slaw dressing by mixing sour cream, mayonnaise, lime juice, and chopped cilantro in a small bowl. Toss with cabbage and set aside.
Heat a skillet over medium-high heat. Cook shrimp for 2-3 minutes on each side until pink and cooked through.
Warm tortillas in a dry skillet or microwave.
Assemble tacos by placing slaw on the bottom of each tortilla, followed by shrimp and optional toppings.
Serve immediately with lime wedges on the side.
Notes
You can grill the shrimp instead of pan-cooking for a smokier flavor.
Make it dairy-free by skipping the sour cream and mayo or using plant-based alternatives.
Double the marinade and save some for drizzling on top as a sauce.
