Cilbir is a traditional Turkish dish made with poached eggs served over garlicky yogurt and topped with a spiced butter sauce. Creamy, savory, and perfect for breakfast or brunch.

  • 2 large eggs
  • 1 cup plain Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon vinegar (for poaching)
  • 2 tablespoons butter
  • 1 teaspoon paprika or Aleppo pepper
  • Salt to taste
  • Optional: chopped fresh dill or parsley for garnish
  • Optional: chili flakes for extra heat

Instructions

  1. In a small bowl, mix the yogurt with minced garlic and a pinch of salt. Set aside at room temperature.
  2. Bring a saucepan of water to a gentle simmer and add vinegar.
  3. Crack an egg into a small bowl, then gently slide it into the simmering water. Repeat with the second egg.
  4. Poach eggs for 3–4 minutes or until whites are set and yolks are still soft. Remove with a slotted spoon and set aside.
  5. In a small pan, melt the butter over medium heat. Add paprika or Aleppo pepper and stir for 30 seconds until fragrant.
  6. To assemble, spread the garlic yogurt onto a plate or shallow bowl.
  7. Place the poached eggs on top of the yogurt.
  8. Drizzle with the spiced butter and garnish with herbs or chili flakes if desired.
  9. Serve immediately with crusty bread.

Notes

  • Use thick, creamy yogurt for best results.
  • Don’t let the butter burn—remove from heat as soon as it bubbles and turns golden.
  • Can be served with pita or simit for a more filling meal.
