  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg (optional)
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract

Cinnamon Sugar Topping:

  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease lightly.
  2. In a large bowl, whisk together flour, both sugars, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk the milk, melted butter, eggs, and vanilla until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined—do not overmix.
  5. Divide the batter evenly among the muffin cups.
  6. Mix the cinnamon sugar topping and sprinkle over each muffin before baking.
  7. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
  8. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

  • Use buttermilk instead of milk for extra tenderness.
  • Add a handful of chopped nuts or raisins for variation.
