For the bread:

  • 2 cups (250 g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (115 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (240 ml) buttermilk (or 1 cup milk + 1 tablespoon vinegar/lemon juice)

For the cinnamon sugar swirl:

  • 1/3 cup (70 g) granulated sugar
  • 1 1/2 teaspoons ground cinnamon

For the topping:

  • 2 tablespoons unsalted butter, melted
  • 1/4 cup (50 g) granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven:
    • Preheat your oven to 175°C (350°F). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix the dry ingredients:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Cream the butter and sugar:
    • In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2–3 minutes.
  4. Add eggs and vanilla:
    • Beat in the eggs, one at a time, then stir in the vanilla extract.
  5. Combine wet and dry ingredients:
    • Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined (do not overmix).
  6. Layer the batter and swirl:
    • Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar swirl mixture over the batter. Add the remaining batter on top and sprinkle the rest of the cinnamon sugar mixture over it.
    • Use a knife or skewer to gently swirl the cinnamon sugar into the batter.
  7. Bake the bread:
    • Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
  8. Prepare the topping:
    • While the bread is still warm, brush the top with melted butter. Mix the granulated sugar and cinnamon together, then sprinkle it generously over the bread.
  9. Cool and serve:
    • Let the bread cool completely before slicing. Serve with coffee, tea, or enjoy as is!

Notes

  • For extra sweetness, drizzle a simple glaze made from powdered sugar and milk over the bread after it cools.
  • Leftovers can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 1 month.
