Classic meatloaf is a hearty and comforting dish made with ground beef, breadcrumbs, and savory seasonings, topped with a sweet and tangy ketchup glaze. It’s a family favorite perfect for weeknight dinners.

Ingredients

Scale
  • 1 1/2 pounds ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 large eggs
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 cup ketchup (for glaze)
  • 2 tablespoons brown sugar (for glaze)
  • 1 tablespoon mustard (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a loaf pan or line with parchment paper.
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, onion, garlic, eggs, Worcestershire sauce, salt, pepper, and thyme. Mix until just combined—do not overmix.
  3. Transfer the mixture to the loaf pan and shape into a loaf.
  4. In a small bowl, mix together ketchup, brown sugar, and mustard. Spread the glaze evenly over the top of the meatloaf.
  5. Bake for 55–65 minutes or until the internal temperature reaches 160°F (70°C).
  6. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • Do not overmix the meat to keep the meatloaf tender.
  • Letting the meatloaf rest helps retain juices and makes slicing easier.
  • You can substitute part of the ground beef with ground pork or turkey.
  • Leftovers make great sandwiches the next day.
