These Cloverleaf Rolls are soft, pillowy dinner rolls with a beautiful pull-apart texture. Made with a simple yeast dough, they’re perfect for Thanksgiving, holiday feasts, or any family dinner!

Ingredients

  • 3 ½ cups all-purpose flour
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • ¼ cup granulated sugar
  • 1 teaspoon salt
  • ¾ cup warm milk (about 110°F)
  • ¼ cup warm water (about 110°F)
  • ¼ cup unsalted butter, melted
  • 1 large egg
  • 2 tablespoons unsalted butter, melted (for brushing)

Instructions

Step 1: Activate the Yeast

  1. In a small bowl, mix warm water, yeast, and 1 teaspoon of sugar.
  2. Let sit for 5-10 minutes until foamy.

Step 2: Make the Dough

  1. In a large bowl, whisk together flour, sugar, and salt.
  2. Add the yeast mixture, warm milk, melted butter, and egg.
  3. Mix until a soft dough forms. Knead on a floured surface for 8-10 minutes until smooth and elastic.

Step 3: First Rise

  1. Place the dough in a greased bowl, cover with a towel, and let rise in a warm place for 1 hour, or until doubled in size.

Step 4: Shape the Rolls

  1. Grease a 12-cup muffin tin.
  2. Punch down the dough and divide it into 36 small pieces.
  3. Roll each piece into a ball and place 3 balls in each muffin cup.

Step 5: Second Rise

  1. Cover and let rise for 30 minutes, or until puffy.

Step 6: Bake

  1. Preheat oven to 375°F (190°C).
  2. Bake for 12-15 minutes, until golden brown.
  3. Brush with melted butter and serve warm!

 


Notes

  • Make ahead: After shaping, refrigerate overnight and bake the next day!
  • Add herbs or garlic butter for extra flavor.
  • Store in an airtight container for 3 days or freeze for 1 month.
