Coffee Cake Cookies are soft, cinnamon-spiced cookies topped with a buttery crumb streusel and finished with a vanilla glaze — the perfect treat that tastes like a slice of coffee cake in cookie form.

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • For the streusel topping:
  • 1/4 cup brown sugar
  • 1/4 cup all-purpose flour
  • 2 tbsp unsalted butter, cold and cubed
  • 1/2 tsp ground cinnamon
  • For the glaze:
  • 1/2 cup powdered sugar
  • 12 tbsp milk
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Gradually add to the wet ingredients and mix until a soft dough forms.
  5. To make the streusel, combine brown sugar, flour, cinnamon, and cold butter in a bowl. Use a fork or pastry cutter to mix until crumbly.
  6. Scoop cookie dough onto prepared baking sheet (about 2 tablespoons per cookie), flatten slightly, and press some streusel onto each one.
  7. Bake for 10–12 minutes or until the edges are lightly golden. Let cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. In a small bowl, mix glaze ingredients until smooth and drizzle over cooled cookies.

Notes

  • Chill the dough for 15–20 minutes if it’s too soft to handle.
  • Store cookies in an airtight container for up to 4 days.
  • Try adding a pinch of nutmeg to the dough for extra spice depth.
