These Coffee Cookies are soft, buttery, and infused with rich coffee flavor. Perfect for coffee lovers, they make a delightful snack to pair with your morning cup of joe or as an indulgent dessert.

  • 1/2 cup (115 g) unsalted butter, softened
  • 1/2 cup (100 g) granulated sugar
  • 1/4 cup (50 g) brown sugar, packed
  • 1 large egg
  • 2 teaspoons instant coffee granules or espresso powder
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190 g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Optional Add-Ins:

  • 1/2 cup (90 g) chocolate chips or chunks
  • 1/4 cup (30 g) chopped nuts

Optional Glaze (for extra flair):

  • 1/2 cup (60 g) powdered sugar
  • 12 teaspoons brewed coffee

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  • Mix the Wet Ingredients:
    • In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
    • Beat in the egg, instant coffee granules, and vanilla extract until well combined.
  • Combine the Dry Ingredients:
    • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Make the Dough:
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • If desired, fold in chocolate chips or nuts.
  • Shape the Cookies:
    • Scoop tablespoon-sized portions of dough and roll them into balls. Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart.
  • Bake:
    • Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers look slightly underbaked.
    • Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  • Optional Glaze:
    • If using, whisk together the powdered sugar and brewed coffee until smooth. Drizzle the glaze over the cooled cookies for an extra coffee kick.
