This Copycat Arby’s Beef and Cheddar sandwich features tender roast beef, zesty red ranch sauce, and creamy cheddar cheese sauce on a soft onion roll. It’s an easy and delicious way to enjoy this fast-food favorite at home!

For the Sandwich:

  • 1 lb thinly sliced roast beef (deli-style or homemade)
  • 4 onion rolls (or regular hamburger buns)
  • 4 slices cheddar cheese (or 1 cup shredded cheddar)

For the Cheddar Cheese Sauce:

  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1/2 cup milk
  • 1 cup shredded sharp cheddar cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt

For the Red Ranch Sauce:

  • 1/4 cup ketchup
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

1. Prepare the Red Ranch Sauce:

  • In a small bowl, combine ketchup, apple cider vinegar, sugar, Worcestershire sauce, garlic powder, and onion powder.
  • Mix well and set aside.

2. Make the Cheddar Cheese Sauce:

  • In a small saucepan, melt butter over medium heat.
  • Whisk in flour and cook for 1-2 minutes to eliminate the raw flour taste.
  • Gradually add milk, whisking constantly until smooth and slightly thickened.
  • Stir in shredded cheddar cheese, garlic powder, onion powder, and salt.
  • Continue stirring until the cheese is fully melted and the sauce is smooth.
  • Remove from heat and set aside.

3. Heat the Roast Beef:

  • Warm the sliced roast beef in a skillet over medium heat.
  • Add a splash of water or beef broth to keep the meat moist.
  • Cover and heat for 2-3 minutes until warm.

4. Assemble the Sandwiches:

  • Lightly toast the onion rolls if desired.
  • Spread a layer of red ranch sauce on the bottom half of each roll.
  • Pile warm roast beef on top of the sauce.
  • Spoon warm cheddar cheese sauce over the beef.
  • Top with the other half of the bun.

5. Serve:

  • Serve immediately with extra red ranch sauce or a side of curly fries for the full Arby’s experience!
