Instructions

Prepare the Batter:

  1. Mix Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, salt, pepper, and sugar.
  2. Combine Wet Ingredients:
    • In a separate bowl, whisk the milk and egg together. Gradually add the wet ingredients to the dry ingredients, stirring until smooth.
  3. Add Corn:
    • Fold the corn kernels into the batter until evenly combined. For extra creaminess, mash a small portion of the corn before mixing it in.

Fry the Nuggets:

  1. Heat the Oil:
    • In a deep skillet or fryer, heat the oil to 350°F (175°C). Ensure there’s enough oil to submerge the nuggets.
  2. Drop the Batter:
    • Using a spoon or small ice cream scoop, drop spoonfuls of batter into the hot oil. Fry in batches to avoid overcrowding the pan.
  3. Fry Until Golden:
    • Cook the nuggets for 3-4 minutes, turning occasionally, until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
