Corn ribs are a fun and flavorful twist on corn on the cob. Cut into rib-like strips, seasoned, and roasted or grilled until tender and slightly charred, they make a perfect side dish or snack.

Ingredients

  • 4 ears of corn, husked
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh lime wedges, for serving
  • Chopped cilantro, for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C) or preheat grill to medium-high heat.
  2. Cut each ear of corn lengthwise into quarters to form rib-like strips (use a sharp knife and cut carefully).
  3. In a small bowl, mix olive oil, smoked paprika, garlic powder, chili powder, salt, and pepper.
  4. Brush the corn ribs with the seasoning mixture on all sides.
  5. Place corn ribs on a baking sheet lined with parchment or grill them directly on grates.
  6. Roast or grill for 15–20 minutes, flipping halfway through, until they curl slightly and develop a char.
  7. Remove and serve hot with a squeeze of lime and garnish with chopped cilantro if desired.

Notes

  • Be cautious when cutting the corn—use a sturdy knife and cutting board.
  • Add grated Parmesan or vegan cheese for extra flavor.
  • Great with dipping sauces like chipotle mayo or ranch.
