4 ears of corn, husked
2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon black pepper
Fresh lime wedges, for serving
Chopped cilantro, for garnish (optional)
Instructions
Preheat oven to 425°F (220°C) or preheat grill to medium-high heat.
Cut each ear of corn lengthwise into quarters to form rib-like strips (use a sharp knife and cut carefully).
In a small bowl, mix olive oil, smoked paprika, garlic powder, chili powder, salt, and pepper.
Brush the corn ribs with the seasoning mixture on all sides.
Place corn ribs on a baking sheet lined with parchment or grill them directly on grates.
Roast or grill for 15–20 minutes, flipping halfway through, until they curl slightly and develop a char.
Remove and serve hot with a squeeze of lime and garnish with chopped cilantro if desired.
Notes
Be cautious when cutting the corn—use a sturdy knife and cutting board.
Add grated Parmesan or vegan cheese for extra flavor.
