Cosmic Brownie Cookies are soft, fudgy cookies inspired by the classic treat. Topped with a rich chocolate ganache and colorful candy-coated sprinkles, they’re perfect for parties or satisfying your sweet tooth!

For the Cookies:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Ganache Topping:

  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Topping:

  • 1/4 cup rainbow candy-coated chocolate sprinkles (like mini M&Ms or rainbow chips)

Instructions

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Make the cookie dough:
    • In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
    • Add the egg and vanilla extract, mixing until combined.
    • Sift in the cocoa powder, flour, baking soda, and salt. Mix until a soft dough forms.
  3. Shape and bake:
    • Scoop 1 1/2-tablespoon portions of dough (or use a medium cookie scoop) and roll into balls. Place them on the prepared baking sheets, spacing about 2 inches apart.
    • Bake for 8-10 minutes, or until the edges are set. The centers may look slightly underdone—this is okay.
    • Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  4. Make the ganache:
    • In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 20-second intervals, stirring between each, until smooth and glossy.
  5. Assemble the cookies:
    • Spoon or spread a small amount of ganache onto the top of each cookie. While the ganache is still wet, sprinkle with rainbow candy-coated sprinkles.
  6. Set and serve:
    • Allow the ganache to set at room temperature for 15-20 minutes, or chill in the refrigerator for 10 minutes. Serve and enjoy!


Notes

  • For extra fudginess, add 1/4 cup mini chocolate chips to the dough.
  • Store cookies in an airtight container at room temperature for up to 3 days.
