  • 1 cup (240 g) cottage cheese
  • 2 large eggs
  • 1 cup (90 g) rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon (optional)
  • 1 teaspoon vanilla extract
  • 1/4 cup (40 g) chocolate chips or blueberries (optional)

Instructions

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Lightly grease a mini muffin tin or line with silicone liners.
  2. Blend the batter:
    • In a blender, combine the bananas, cottage cheese, eggs, oats, baking powder, cinnamon (if using), and vanilla extract. Blend until smooth and well combined.
  3. Add optional mix-ins:
    • If using chocolate chips or blueberries, fold them gently into the batter after blending.
  4. Fill the muffin tin:
    • Spoon the batter evenly into the prepared mini muffin tin, filling each cup about 3/4 full.
