Cottage Cheese Lasagna is a hearty, cheesy twist on the classic Italian favorite, using creamy cottage cheese in place of the traditional ricotta. It delivers all the comfort and flavor of classic lasagna—rich meat sauce, gooey melted cheese, and tender pasta layers—with a protein-packed, budget-friendly upgrade. Perfect for weeknight dinners, meal prep, or feeding a hungry crowd.

For the Meat Sauce:

  • 1 tablespoon olive oil

  • 1 pound ground beef (or Italian sausage)

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1 (24 oz) jar marinara sauce

  • 1 (14.5 oz) can diced tomatoes, drained

  • 1 teaspoon Italian seasoning

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

For the Cheese Filling:

  • 3 cups cottage cheese

  • 1 large egg

  • ½ cup grated Parmesan cheese

  • 2 tablespoons chopped fresh parsley (or 1 tsp dried)

  • ½ teaspoon salt

  • ½ teaspoon black pepper

For Assembly:

  • 9–12 lasagna noodles, cooked and drained

  • 3 cups shredded mozzarella cheese

  • Extra Parmesan for topping (optional)

Instructions

  1. stir in garlic.
    Add ground beef and cook until browned. Drain excess fat.
    Stir in marinara sauce, diced tomatoes, Italian seasoning, salt, and pepper. Simmer 10–15 minutes.

  2. Mix Cottage Cheese Filling:
    In a bowl, combine cottage cheese, egg, Parmesan, parsley, salt, and pepper. Mix until smooth.

  3. Preheat & Prep:
    Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

  4. Assemble Lasagna:

    • Spread a layer of meat sauce on the bottom of the dish.

    • Add a layer of noodles, then spread on half the cottage cheese mixture.

    • Top with a layer of mozzarella cheese.

    • Repeat layers: sauce, noodles, cottage cheese, mozzarella.

    • Finish with a final layer of noodles, sauce, mozzarella, and optional extra Parmesan.

  5. Bake:
    Cover with foil and bake for 25 minutes. Remove foil and bake an additional 20 minutes until cheese is golden and bubbly.

  6. Cool & Serve:
    Let rest 10–15 minutes before slicing for best results.

Notes

  • Want extra veggies? Add a layer of sautéed spinach or mushrooms.

  • Use ground turkey or sausage as a meat swap.

 

  • This lasagna can be assembled up to 1 day ahead and refrigerated before baking.
