Cowboy Caviar, also known as Texas Caviar, is a colorful and flavorful mix of beans, vegetables, and a zesty dressing. This versatile dish can be served as a dip with tortilla chips, a fresh salad, or a topping for grilled meats. Perfect for parties, potlucks, or as a healthy snack!

Ingredients

  • 1 (15-ounce) can black-eyed peas, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1½ cups corn kernels (fresh, frozen, or canned)
  • 1 cup diced tomatoes
  • ½ cup diced red bell pepper
  • ½ cup diced green bell pepper
  • ½ cup diced red onion
  • 2 cloves garlic, minced
  • 12 jalapeño peppers, seeded and finely chopped (optional)
  • ½ cup chopped fresh cilantro

For the Dressing:

  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 2 tablespoons lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and freshly ground black pepper, to taste

 


Instructions

  1. Prepare the Salad:

    • In a large mixing bowl, combine the black-eyed peas, black beans, corn, diced tomatoes, bell peppers, red onion, minced garlic, jalapeños, and cilantro.
  2. Make the Dressing:

    • In a small bowl, whisk together olive oil, red wine vinegar, lime juice, cumin, chili powder, salt, and pepper until well combined.
  3. Combine and Chill:

    • Pour the dressing over the salad mixture.
    • Gently toss until all ingredients are evenly coated.
    • Cover and refrigerate for at least 1 hour to let the flavors blend.
  4. Serve:

    • Stir the Cowboy Caviar before serving.
    • Serve chilled with tortilla chips or as a fresh side dish.

Notes

  • Avocado Option: Add diced avocado just before serving for a creamy touch.
  • Spice Level: For more heat, keep the jalapeño seeds or add a pinch of cayenne pepper.
