Cowboy Soup is a hearty, flavorful dish loaded with ground beef, vegetables, beans, and seasonings. It’s a comforting and easy-to-make one-pot meal, perfect for a chilly evening or a quick family dinner. Pair it with cornbread or crusty bread for the ultimate cozy meal.

Ingredients

  • 1 pound (450 g) ground beef
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 medium potato, peeled and diced
  • 1 can (15 oz/425 g) diced tomatoes (with juice)
  • 1 can (15 oz/425 g) whole kernel corn (drained)
  • 1 can (15 oz/425 g) pinto beans (drained and rinsed)
  • 1 can (15 oz/425 g) black beans (drained and rinsed)
  • 1 can (8 oz/227 g) tomato sauce
  • 4 cups (1 liter) beef broth or water
  • 1 packet (1 oz/28 g) taco seasoning
  • 1 teaspoon chili powder (optional, for heat)
  • Salt and black pepper, to taste

Optional Toppings:

  • Shredded cheddar cheese
  • Sour cream
  • Chopped green onions
  • Crushed tortilla chips

Instructions

  1. Cook the Ground Beef:
    • In a large pot or Dutch oven, brown the ground beef over medium heat, breaking it into crumbles as it cooks.
    • Add the diced onion and garlic and cook until softened, about 3-4 minutes. Drain any excess grease.
  2. Add the Vegetables and Broth:
    • Stir in the diced potato, diced tomatoes (with juice), corn, pinto beans, black beans, and tomato sauce.
    • Pour in the beef broth or water and stir to combine.
  3. Season the Soup:
    • Add the taco seasoning, chili powder (if using), salt, and black pepper. Stir well.
  4. Simmer:
    • Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, or until the potatoes are tender. Stir occasionally.
  5. Taste and Adjust:
    • Taste the soup and adjust the seasoning with more salt, pepper, or chili powder as needed.
  6. Serve:
    • Ladle the soup into bowls and garnish with your favorite toppings like shredded cheese, sour cream, green onions, or crushed tortilla chips.
