This Cowboy Stew is a hearty, flavor-packed dish loaded with beef, sausage, beans, and potatoes. It’s the perfect one-pot meal for cold nights, camping trips, or when you need a filling dinner!

Ingredients

  • 1 lb ground beef
  • 12 oz smoked sausage (kielbasa or andouille), sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups baby potatoes, halved
  • 1 (15-oz) can diced tomatoes
  • 1 (15-oz) can ranch-style beans (or pinto beans), drained
  • 1 (15-oz) can corn, drained
  • 1 (10-oz) can Rotel (diced tomatoes with green chilies)
  • 2 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt

 

  • ¼ teaspoon black pepper

Instructions

  1. Brown the Meat:

    • In a large Dutch oven or stockpot, cook ground beef over medium-high heat until browned (about 5 minutes).
    • Add sliced smoked sausage and cook for 2-3 more minutes.
    • Stir in onion and garlic, cooking until softened.
  2. Add the Vegetables & Beans:

    • Stir in baby potatoes, diced tomatoes, ranch-style beans, corn, and Rotel.
  3. Simmer the Stew:

    • Pour in beef broth, Worcestershire sauce, chili powder, paprika, salt, and pepper.
    • Bring to a boil, then reduce heat to low and let simmer 20-25 minutes, or until potatoes are tender.
  4. Serve & Enjoy:

    • Ladle into bowls and serve hot with cornbread, biscuits, or a side salad!

Notes

  • For extra spice, add jalapeños or cayenne pepper.
  • Want it thicker? Mash some potatoes into the broth.
  • Slow Cooker Version: Brown the beef and sausage first, then add everything to a slow cooker. Cook on LOW for 6-8 hours or HIGH for 3-4 hours.
