This Cowboy Style Beef and Potato Casserole is a hearty, family-friendly dish loaded with seasoned ground beef, tender potatoes, melted cheese, and a touch of smoky BBQ flavor. Perfect for weeknight dinners or potlucks, this casserole is comfort food at its best.

Ingredients

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • Salt and black pepper, to taste
  • 1 (10.5 oz) can cream of mushroom or cream of cheddar soup
  • 1/2 cup sour cream
  • 1/4 cup BBQ sauce
  • 4 cups thinly sliced or diced potatoes (about 3 medium potatoes)
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup milk (optional, to thin sauce if needed)

Optional Toppings:

  • Crumbled cooked bacon
  • Sliced green onions
  • Chopped fresh parsley


Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. Cook the Beef Mixture:
    • In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and cooked through. Drain any excess grease.
    • Stir in the smoked paprika, chili powder, cumin, salt, and black pepper. Mix well to combine.
  3. Prepare the Sauce:
    • In a bowl, combine the cream of mushroom soup, sour cream, and BBQ sauce. If the mixture is too thick, stir in 1/4 cup milk to thin it slightly.
  4. Layer the Casserole:
    • Spread half of the sliced potatoes evenly in the prepared baking dish.
    • Top with half of the beef mixture, then half of the sauce, and sprinkle with 3/4 cup of shredded cheddar cheese.
    • Repeat the layers with the remaining potatoes, beef, sauce, and cheese.
  5. Bake the Casserole:
    • Cover the baking dish with foil and bake for 40 minutes.
    • Remove the foil and bake for an additional 15–20 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
  6. Garnish and Serve:
    • Remove from the oven and let the casserole cool for 5 minutes. Garnish with crumbled bacon, sliced green onions, or parsley, if desired. Serve warm.

  • Use frozen diced or shredded potatoes for convenience.
  • Swap the ground beef for ground turkey or sausage for a variation.
