This Cozy Lemon Chicken & Rice Soup is warm, comforting, and packed with flavor! Made with tender chicken, fluffy rice, fresh lemon juice, and aromatic herbs, it’s the perfect cold-weather meal or immune-boosting dish for when you need something soothing.

Ingredients

For the Soup:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 carrots, peeled & diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • ½ teaspoon dried oregano
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 6 cups chicken broth (low sodium preferred)
  • 1 cup white rice (uncooked, long-grain or basmati)
  • 2 cups cooked shredded chicken (rotisserie works great!)
  • ¼ cup fresh lemon juice (about 1 large lemon)
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh parsley, chopped

Optional Add-Ins:

  • 2 egg yolks (for a silkier texture)
  • ½ cup heavy cream (for extra richness)

Instructions

Step 1: Sauté the Aromatics

  1. In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Add onions, carrots, and celery. Sauté for 5 minutes, until softened.
  3. Stir in garlic, thyme, oregano, salt, and pepper. Cook for 30 seconds until fragrant.

Step 2: Simmer the Soup

  1. Pour in chicken broth and bring to a boil.
  2. Stir in rice and reduce heat to low. Cover and simmer for 15 minutes, until rice is tender.

Step 3: Add Chicken & Lemon

  1. Stir in shredded chicken, lemon juice, and lemon zest.
  2. Simmer for 5 more minutes to meld the flavors.

Step 4: Make it Extra Creamy (Optional)

  1. For a silky texture, whisk 2 egg yolks in a bowl. Slowly add ½ cup hot soup broth while whisking.
  2. Stir the mixture back into the soup.
  3. For a richer soup, stir in ½ cup heavy cream.

Step 5: Garnish & Serve

  1. Sprinkle with fresh parsley and serve warm.
  2. Enjoy with crusty bread or crackers!
