  • 1 can (10.5 oz / 300 g) cream of chicken soup
  • 1/2 cup mayonnaise or sour cream

  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup crushed Ritz crackers or breadcrumbs (optional)
  • 2 tablespoons unsalted butter, melted (optional, for topping)

Instructions

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Prepare the chicken:
    • Season the chicken breasts with salt, pepper, garlic powder, and onion powder on both sides. Place them in the prepared baking dish.
  3. Make the broccoli cheddar mixture:
    • In a medium bowl, mix together the cream of chicken soup, mayonnaise (or sour cream), 1 1/2 cups of shredded cheddar cheese, and the broccoli florets.
  4. Assemble the dish:
    • Spread the broccoli cheddar mixture evenly over the chicken breasts.
    • Sprinkle the remaining 1/2 cup of cheddar cheese on top.
    • If using, mix the crushed crackers with melted butter and sprinkle over the cheese for a crispy topping.
  5. Bake the chicken:
    • Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10–15 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the top is golden and bubbly.
  6. Serve:
    • Let the dish rest for 5 minutes before serving. Pair with mashed potatoes, rice, or a side salad for a complete meal.
