Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare Meatloaf Mixture: In a large bowl, combine the ground beef, diced onion, diced green bell pepper, crushed Ritz crackers, shredded cheddar cheese, beaten eggs, whole milk, salt, and black pepper. Mix until all ingredients are just combined; avoid overmixing to prevent a dense meatloaf.
  3. Shape the Meatloaf: Transfer the mixture to the prepared baking sheet and shape it into a loaf approximately 9×5 inches.
  4. Bake: Place the meatloaf in the preheated oven and bake for 30 minutes.
  5. Prepare the Glaze: While the meatloaf is baking, mix together the ketchup, brown sugar, and yellow mustard in a small bowl until smooth.

  7. Continue Baking: Return the meatloaf to the oven and bake for an additional 30 minutes, or until the internal temperature reaches 160°F (70°C).
