Cracker Chicken Bites are crispy, golden, and packed with flavor! These bite-sized pieces of chicken are coated in crushed crackers and baked (or fried) to perfection, making them a perfect appetizer, snack, or kid-friendly meal.

Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 sleeve (about 35) Ritz crackers, crushed
  • ½ cup shredded cheddar cheese (optional, for extra flavor)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • ¼ tsp black pepper
  • ¼ tsp salt
  • 2 tbsp butter, melted
  • 1 egg, beaten
  • 2 tbsp milk

Optional Dipping Sauces:

  • Ranch dressing
  • Honey mustard
  • BBQ sauce

Instructions

1. Preheat & Prepare:

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • (For air fryer: Preheat to 375°F (190°C).)

2. Make the Cracker Coating:

  • In a bowl, mix crushed crackers, cheddar cheese (if using), garlic powder, onion powder, paprika, salt, and black pepper.

3. Coat the Chicken:

  • In a separate bowl, whisk together egg and milk.
  • Dip each chicken piece into the egg mixture, then coat with the cracker mixture, pressing lightly to adhere.

4. Bake or Air Fry:

  • Oven Method: Place chicken on the baking sheet, drizzle with melted butter, and bake for 15-18 minutes, flipping halfway.
  • Air Fryer Method: Place chicken in a single layer in the air fryer basket and cook for 10-12 minutes, shaking halfway.

5. Serve & Enjoy:

  • Serve warm with your favorite dipping sauces!

Notes

Make It Extra Crispy: Use Panko breadcrumbs mixed with crackers.
Spicy Version: Add ½ tsp cayenne pepper to the cracker coating.
Storage: Refrigerate leftovers for up to 3 days; reheat in the oven at 375°F for 5 minutes.
