This Cranberry Bliss Coffee Cake is soft, moist, and bursting with sweet-tart cranberries! Topped with a buttery crumb topping and a drizzle of white chocolate, it’s the perfect holiday-inspired treat for breakfast, brunch, or a cozy afternoon coffee break.

For the Cake:

  • 1 ¾ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ tsp orange zest (optional, for extra flavor)
  • ½ cup sour cream or Greek yogurt
  • ¼ cup milk
  • 1 cup fresh or dried cranberries (chopped if large)
  • ½ cup white chocolate chips

For the Crumb Topping:

  • ½ cup all-purpose flour
  • ⅓ cup brown sugar
  • ¼ tsp cinnamon
  • 4 tbsp unsalted butter, melted

For the White Chocolate Drizzle:

  • ½ cup white chocolate chips
  • 1 tsp coconut oil or butter

Instructions

Step 1: Make the Cake Batter

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another large bowl, beat butter and sugar until light and fluffy.
  4. Add eggs, vanilla, and orange zest, mixing until combined.
  5. Mix in sour cream and milk, then gradually add the dry ingredients, stirring until smooth.
  6. Fold in cranberries and white chocolate chips. Pour batter into the prepared pan.

Step 2: Make the Crumb Topping

  1. In a small bowl, mix flour, brown sugar, and cinnamon. Add melted butter and stir until crumbly.
  2. Sprinkle evenly over the cake batter.

Step 3: Bake & Cool

  1. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.

Step 4: Add the White Chocolate Drizzle

  1. Melt white chocolate chips and coconut oil/butter in the microwave in 30-second intervals, stirring between each.
  2. Drizzle over the cooled cake and let set before slicing.

Notes

  • For extra flavor, add ½ tsp almond extract to the batter.
  • Use fresh cranberries for a more tart contrast or dried cranberries for a sweeter bite.
  • Make it nutty! Add ½ cup chopped pecans or walnuts to the crumb topping.
