1/2 cup unsalted butter, melted
1 cup brown sugar, packed
1 large egg
1 tsp vanilla extract
1 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
3/4 cup butterscotch chips
3/4 cup dried cranberries
Optional: 1/4 cup chopped walnuts or pecans
Preheat the Oven:
Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
Make the Batter:
In a large bowl, mix melted butter and brown sugar until smooth.
Add egg and vanilla, and stir until well combined.
Stir in flour, baking powder, and salt just until no dry streaks remain.
Fold in butterscotch chips, cranberries, and nuts if using.
Bake:
Spread batter evenly into the prepared pan.
Bake for 22–25 minutes, or until the edges are golden and a toothpick in the center comes out mostly clean.
Let cool completely in the pan before cutting into bars.
