These Cranberry Butterscotch Bars are soft, chewy dessert bars loaded with sweet butterscotch chips and tart dried cranberries. With a buttery brown sugar base and a golden top, these easy bars are perfect for the holidays—or any time you’re craving that sweet-tart combo.

  • 1/2 cup unsalted butter, melted

  • 1 cup brown sugar, packed

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 cup all-purpose flour

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 3/4 cup butterscotch chips

  • 3/4 cup dried cranberries

  • Optional: 1/4 cup chopped walnuts or pecans

Instructions

  1. Preheat the Oven:

    • Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.

  2. Make the Batter:

    • In a large bowl, mix melted butter and brown sugar until smooth.

    • Add egg and vanilla, and stir until well combined.

    • Stir in flour, baking powder, and salt just until no dry streaks remain.

    • Fold in butterscotch chips, cranberries, and nuts if using.

  3. Bake:

    • Spread batter evenly into the prepared pan.

    • Bake for 22–25 minutes, or until the edges are golden and a toothpick in the center comes out mostly clean.

    • Let cool completely in the pan before cutting into bars.

Notes

  • These bars get chewier as they cool, so don’t overbake.

  • You can swap butterscotch chips with white chocolate for a sweeter twist.

 

  • Store in an airtight container for up to 5 days at room temperature or freeze for up to 2 months.
