  • 1/2 teaspoon baking powder

  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup finely grated carrots
  • For the cream cheese swirl:
  • 4 oz cream cheese, softened
  • 2 tablespoons granulated sugar
  • 1 egg yolk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate large bowl, whisk together oil, granulated sugar, brown sugar, eggs, and vanilla until smooth.
  4. Stir dry ingredients into the wet ingredients until just combined, then fold in grated carrots.
  5. Pour batter into the prepared pan and smooth the top.
  6. In a small bowl, beat cream cheese, sugar, egg yolk, and vanilla until smooth.
  7. Drop spoonfuls of the cream cheese mixture over the carrot cake batter. Swirl gently with a knife.
  8. Bake for 25–30 minutes or until a toothpick inserted into the center comes out clean.
  9. Let cool completely in the pan before slicing into bars.
