This creamy, flavorful dish combines tender chicken breasts with a rich cream cheese sauce seasoned with garlic and herbs. A quick and satisfying dinner that pairs perfectly with rice, pasta, or vegetables.

Serves 4:

  • For the chicken:
    • 4 boneless, skinless chicken breasts
    • 1 tablespoon olive oil
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • Salt and black pepper, to taste
  • For the cream cheese sauce:
    • 2 tablespoons unsalted butter
    • 3 cloves garlic, minced
    • 1 cup (240 ml) chicken broth
    • 1 (8 oz / 227 g) block cream cheese, softened and cubed
    • 1/2 cup (50 g) grated Parmesan cheese
    • 1 teaspoon dried Italian seasoning
    • 1/4 teaspoon red pepper flakes (optional)
    • 1/4 cup (60 ml) heavy cream (optional, for extra creaminess)
    • Chopped fresh parsley, for garnish

Instructions

  1. Prepare the chicken:
    • Season the chicken breasts on both sides with garlic powder, onion powder, salt, and black pepper.
  2. Sear the chicken:
    • Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden brown and cooked through (internal temperature of 165°F / 74°C). Remove chicken from the skillet and set aside.
  3. Make the sauce:
    • In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
    • Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
    • Add the cream cheese cubes, stirring until melted and smooth.
  4. Season the sauce:
    • Stir in the Parmesan cheese, Italian seasoning, and red pepper flakes (if using). If the sauce is too thick, add a splash of chicken broth or heavy cream for desired consistency.
  5. Combine the chicken and sauce:
    • Return the chicken breasts to the skillet, spooning the sauce over them. Simmer for 2-3 minutes to heat through and meld flavors.
  6. Serve:
    • Garnish with fresh parsley and serve warm over rice, pasta, or mashed potatoes.


Notes

  • For added flavor, sprinkle the chicken with smoked paprika before searing.
  • Leftovers can be stored in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of chicken broth if the sauce thickens too much.
  • Add sautéed spinach or mushrooms for a veggie boost.
