Cream Cheese Tortilla Bites are a quick, no-cook appetizer or snack that’s easy to customize. Made with a creamy filling wrapped in soft tortillas, they’re perfect for parties, lunchboxes, or a quick snack.

  • 4 large flour tortillas
  • 8 oz cream cheese, softened
  • ½ cup shredded cheddar cheese (or your favorite cheese)
  • 2 tbsp ranch dressing or sour cream
  • ½ cup diced bell peppers (any color)
  • ¼ cup chopped green onions
  • ¼ cup chopped fresh parsley or cilantro (optional)
  • ¼ cup cooked bacon bits (optional)
  • Salt and pepper, to taste

Instructions

  1. Prepare the Filling:
    • In a medium bowl, mix the softened cream cheese, shredded cheddar cheese, and ranch dressing until smooth.
    • Stir in the diced bell peppers, green onions, parsley or cilantro (if using), and bacon bits (if using). Season with salt and pepper to taste.
  2. Spread the Mixture:
    • Lay a tortilla flat and spread a thin, even layer of the cream cheese mixture across the surface, leaving about 1 inch of space around the edges.
  3. Roll and Chill:
    • Tightly roll up the tortilla. Repeat with the remaining tortillas and filling.
    • Wrap each rolled tortilla in plastic wrap and refrigerate for at least 1 hour to firm up.
  4. Slice and Serve:
    • Remove the plastic wrap and slice each tortilla roll into 1-inch pieces.
    • Arrange the bites on a platter and serve chilled.

Notes

  • Add variety by including diced jalapeños, shredded chicken, or sliced black olives.
  • Use spinach or sun-dried tomato tortillas for extra color and flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
