This creamy corn recipe elevates the classic side dish with the perfect balance of sweetness, richness, and buttery goodness. Perfect for holidays, barbecues, or any comforting meal.

Ingredients

Scale
  • 4 cups fresh corn kernels (about 6 ears) or frozen corn (thawed)
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 2 tbsp unsalted butter
  • 1 tbsp sugar (adjust to taste)
  • 1/4 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1 tbsp all-purpose flour (for thickening)
  • 2 tbsp grated Parmesan cheese (optional, for extra flavor)
  • 1/4 tsp garlic powder (optional)

Instructions

  1. Prepare the Corn:
    • If using fresh corn, cut the kernels off the cobs and scrape the cobs with the back of a knife to release the milky liquid for extra flavor.
  2. Cook the Corn:
    • In a large skillet or saucepan over medium heat, melt the butter. Add the corn kernels and cook for 2-3 minutes, stirring occasionally.
  3. Add the Cream and Milk:
    • Stir in the heavy cream, milk, sugar, salt, pepper, and garlic powder (if using). Bring the mixture to a gentle simmer.
  4. Thicken the Mixture:
    • In a small bowl, mix the flour with 2 tablespoons of water to create a slurry. Stir the slurry into the corn mixture and cook for 2-3 minutes until the sauce thickens.
  5. Add the Parmesan (Optional):
    • Stir in the grated Parmesan cheese for extra richness and depth of flavor.
  6. Serve:
    • Remove from heat and transfer to a serving dish. Serve hot and enjoy as a side dish with grilled meats, roasted poultry, or hearty casseroles.

Notes

  • For a sweeter variation, add an extra tablespoon of sugar or drizzle with honey before serving.
  • This dish can be made ahead and reheated gently on the stovetop with a splash of milk or cream to restore the consistency.
  • For a smoky twist, sprinkle with crumbled bacon or smoked paprika before serving.
