Creamiest Baked Mashed Potatoes are rich, fluffy, and buttery, baked until golden on top, making them the ultimate comforting side dish for any meal.

Ingredients

  • 3 lbs russet or Yukon gold potatoes, peeled and cubed
  • 1/2 cup butter, softened
  • 1 cup sour cream
  • 1/2 cup whole milk
  • 4 oz cream cheese, softened
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional: 1/2 cup shredded cheddar cheese for topping
  • Fresh chives for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and butter a 9×13-inch baking dish.
  2. Place potatoes in a large pot of salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes.
  3. Drain potatoes and return to pot. Mash until smooth.
  4. Add butter, sour cream, cream cheese, milk, salt, and pepper. Stir until creamy and well combined.
  5. Transfer mashed potatoes to the prepared baking dish and spread evenly.
  6. Top with shredded cheddar cheese if desired.
  7. Bake uncovered for 20-25 minutes, or until heated through and the top is slightly golden.
  8. Garnish with fresh chives before serving.
