These Creamy Asiago Bacon-Wrapped Roasted Onions are an irresistible side dish or appetizer! Sweet onions are wrapped in savory bacon, roasted until tender, and finished with a rich Asiago cream sauce. Elegant enough for a holiday table, yet simple enough for a weekend dinner.

Ingredients

  • 4 medium sweet onions (like Vidalia), peeled and halved

  • 8 slices thick-cut bacon

  • 2 tsp olive oil

  • 1 tsp fresh thyme (or ½ tsp dried)

  • Salt and pepper, to taste

  • 1 cup beef broth (or veggie broth for a lighter version)

  • ½ cup heavy cream

  • 1 tsp Worcestershire sauce

  • ½ cup shredded Asiago cheese

  • Fresh parsley or thyme, for garnish (optional)

Instructions

  1. Preheat oven: Set to 375°F (190°C).

  2. Partially cook the bacon: In a skillet over medium heat, cook the bacon just until it begins to brown and render fat but is still flexible. Set aside on paper towels to drain.

  3. Wrap the onions: Slice each onion in half top-to-bottom. Wrap one slice of bacon around each half and secure with toothpicks if needed.

  4. Season and arrange: Place the bacon-wrapped onions in a greased or parchment-lined baking dish. Drizzle with olive oil and sprinkle with thyme, salt, and pepper.

  5. Add sauce base: In a small bowl, whisk together beef broth, cream, and Worcestershire. Pour the mixture into the baking dish around the onions.

  6. Roast: Bake uncovered for 35–45 minutes, or until onions are fork-tender and bacon is crisp. If bacon gets too dark, loosely cover with foil.

  7. Add cheese: Sprinkle Asiago over the onions and bake for another 5–8 minutes, or until the cheese is melted and bubbly.

  8. Serve: Let cool for a couple minutes, then garnish with herbs if desired. Serve warm with extra sauce spooned over top.

 


Notes

  • You can thicken the cream sauce more by simmering it on the stovetop before adding to the dish.

  • For a vegetarian version, use plant-based bacon and mushroom broth.
