Ingredients

Scale
  • ½ cup mayonnaise
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, minced
  • ½ teaspoon Worcestershire sauce
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon anchovy paste (optional, but adds depth)
  • 2 tablespoons olive oil

Instructions

  1. Blend the Ingredients:

    • In a medium bowl, whisk together mayonnaise, Parmesan cheese, lemon juice, Dijon mustard, garlic, Worcestershire sauce, salt, pepper, and anchovy paste (if using).
  2. Slowly Add Oil:

    • While whisking, drizzle in the olive oil to help emulsify the dressing.
  3. Adjust to Taste:

    • Add more lemon juice for tanginess, more Parmesan for richness, or more Worcestershire for depth.
  4. Chill & Serve:

    • Let the dressing sit in the fridge for 15-30 minutes to develop flavors. Serve over romaine lettuce with croutons and extra Parmesan.

Notes

  • No Anchovies? Substitute with an extra dash of Worcestershire sauce.
  • Make It Lighter: Swap half the mayo for Greek yogurt.
  • Storage: Store in an airtight container in the fridge for up to 5 days.
